Spicy Veggie Chicken

  I swiped this from the Republic.

You could modify it to use tomato sauce instead of expensive V-8 juice. And of course add much hotter chillies and some graham masala!

Spicy-Veggie Chicken

  • 1/2 medium red onion
  • 1 medium bell pepper (any color)
  • 2 boneless, skinless chicken breasts (about 8 ounces each)
  • 1 tablespoon butter
  • 1 cup spicy vegetable or tomato juice (such as Spicy V8)

Peel and dice onion. Seed and chop bell pepper. Cut chicken breasts in half to make 4 pieces. Melt butter in a large skillet over medium-high heat. Add chicken and cook each side until light golden brown, 2 to 3 minutes per side. Remove to a plate. Add onion and pepper to pan; saute until tender, 3 to 4 minutes. Return chicken to pan and add vegetable juice. Reduce heat to medium-low. Simmer until juice thickens slightly and chicken is cooked through, 5 to 10 minutes.

Prep time: 15 minutes

Total time: 25 minutes

Servings: 4

Approximate values per serving: 177 calories, 4 g fat, 74 mg cholesterol, 27 g protein, 6 g carbohydrates, 1 g fiber, 326 mg sodium, 20 percent calories from fat.
