Prickly-Pear Margaritas

  Prickly-Pear Margaritas

  • 3 prickly-pear fruit (tunas in Spanish), peeled
  • 2 cups tequila
  • ½ cup freshly squeezed lime juice
  • ½ cup Triple Sec, Grand Marnier or Cointreau
  • ½ cup crushed ice
  • Honey (optional)

Place the prickly-pear fruit in a glass container. Pour the tequila over them, cover and refrigerate at least overnight or as long as 3 days. Transfer the prickly-pear fruit and tequila to a blender or food processor and puree. Strain through a sieve with holes large enough to hold back the seeds but let most of the pulp through. Measure out 1 cup of puree and place it in a blender with lime juice, liqueur and ice; mix well. If it is too tart, add a little honey. Pour into margarita glasses and serve immediately.

Makes 6 servings.
