Hummus-Stuffed Portobellos by Meghan Pembleton
Preheat oven to 375 degrees. Wipe mushrooms clean with a damp paper towel; remove stems. Heat oil in a large skillet over medium-high heat. Sear mushrooms until browned, about 3 minutes per side. Transfer them to a baking sheet, stem side up. In a medium bowl, stir together cream cheese, hummus and bell pepper. Spoon onto mushrooms. Bake 8 minutes.
