I never knew this but one reason you put butter
on both sides of a sandwich is to keep the liquids
like catsup and mustard from soaking destroying the bread.
The butter waterproofs the bread.
Also the butter tastes good! I guess in my case I could use olive oil instead of butter. Yes chilli olive oil!
