One interesting thing she said is that different areas of India use different types of oil to cook with. Like coconut oil, canola oil, peanut oil, mustard oil and sesame oil. She said that each oil gives the food a different flavor or taste. I should try cooking the same food with all the different oils above and compare the tastes. I think she said she uses canola oil, not for the taste but because it cooks at the hottest tempature.
