I discovered this by accident and it turned out pretty good.
I cooked up about a half pound of chorizo and added maybe 10 or 20 tater tots.
I was planning on keeping the tater tots whole but I ended up smashing them up as I cooked them.
I ended up with a pan full of cooked ground chorizo and shredded potatoes. The potatoes absorbed the grease from the chorizo and ended up tasting pretty good.
